Behind this lot is a coffee grower who knows his land better than anyone. Jairo L. Benavides made every decision that turned this cherry into the cup in your hands — from harvest to drying. Finca El Vergel, in the heart of Huila, Colombia’s most recognized coffee-growing region.

The process that sets it apart
The cherry is picked at peak ripeness and goes directly into a 72-hour aerobic fermentation without pulping. The bean rests inside the fruit, absorbing the sugars and compounds from the mucilage under controlled conditions. This step is what defines the character and depth of the cup.

After fermentation, the coffee is pulped and moves to a second stage: 24 hours of tank fermentation that cleans and refines the profile. It finishes with a traditional wash that locks in the bean’s clarity before drying.

Drying takes place on African raised beds under greenhouse cover — controlled, even, protected — preserving all the aromatic complexity developed during fermentation.

The medium-high roast was designed to honor that process without sacrificing structure. The result: body, sweetness, and acidity in balance.

What you need to know

Specialty coffee is coffee that has received a cupping score of 80 points or higher out of 100 according to the Specialty Coffee Association standards. At Altora, beyond the score, every coffee comes with the name of the grower who cultivated it, the farm, the altitude, and the processing method. It’s not a promise on the label — it’s verifiable information on every lot.

All our coffees come from Huila, Colombia — one of the most recognized coffee-growing regions in the world for the quality of its production. We work directly with growers from Huila who cultivate at elevations between 1,300 and 1,500 meters above sea level. Jairo Benavides, from Gigante, Huila, grew Altora’s first lot.

Each lot is a specific harvest from a specific grower. When the bags sell out, that coffee is gone. The same producer’s next harvest will have different characteristics — weather, processing decisions, and the season change what ends up in the cup. Each lot has a number because every story is unrepeatable.

Every Altora lot includes: the grower’s name, farm, municipality, altitude, bean variety, and processing method. That information appears on the packaging and on this site. Looking back at the grower is looking back at the origin — that’s what Altora’s traceability means in practice.
